All I was missing was a Dancing Banana...

Yeah Peanut butter jelly time, I know its old but yeah, Peanut butter jelly cupcakes  had to be done. Straight up, I love peanut butter 'n jelly sandwiches. Has to be creamy mixed with just the right amount of raspberry jelly. My bf, being Australian shunned this idea(obv must be the lack  of Vegemite in the cupcake) because as he told peanut butter and jelly was not common here. These ended up go so well, after being brought into his work and shared, it was obvious this place doesnt  hate the idea.          

Peanut butter and Jelly Cupcakes
Makes Approx 24 cupcakes

Cupcakes
1 3/4 cups Flour
3/4 cup Sugar
56g/ 1/4 cup Butter
1 tsp Vanilla Extract
2 eggs
1 cup Milk
1/2 cup Peanut Butter ( I used smooth since I never have any other kind in the house)
1 Tbsp Baking Powder  
1/2 tsp Salt
                                         
Frosting
225g/ 8 oz(Approx 1 box) Cream Cheese
4 Tbsp Butter
1 tsp Vanilla Extract
1 cup Peanut Butter
1 1/2 cups Powdered Sugar
Jelly of any flavour choice, I used raspberry for this.

Preheat oven to 170C/350F
Sift Flour/Baking Powder/Salt into a small bowl
In a larger bowl cream your Butter until smooth
Slowly add your Sugar to your butter and mix until fully blended
Add your Peanut Butter and do the same.
Mix in 1 egg at a time and the slowly add in your sift dry items until fully mixed
Add your milk and mix until fully blended, about 3-5 minutes
Fill your cupcake pan 3/4 full and Bake for 18-20 minutes or until a toothpick comes out clean

For the Frosting                                                                                          
Cream your Butter until smooth and then mix in your Cream Cheese (helps if it is softened ahead of time) and Peanut Butter until fully mixed and smooth, Mix in your Powdered Sugar and vanilla extract. It'll be a bit softer then some other frosting but if you would like it stiffer you can add more Powdered Sugar

I had used some raspberry jelly and filled my cupcakes by injecting them with a round  frosting tip, You can also cut a hole. I used the frosting like a basket making a bowl of frosting and then putting a dab of jelly in the middle. Enjoy <3
