Chocolate Chip and Pistachio goodness


Im actually not a big sweets type person, but I have this small place in my heart all things creamy, Puddings, Creme Brulee , panna cotta, If its made with milk and not covered in sugar Im all over it. Puddings, a sweet favourite of mine is pistachio, Light green in colour and with amazing intoxicating smell. I found a small package of this pudding in a import shop here and bought it not caring what I would do with it. Having been making a ton of frosting i was getting tired of Buttercream. I decided I would use pudding mix and make a whipped cream/pudding mix.  The cake could have been anything but Im fussy enough to hate doing plain old vanilla. Chocolate chip, was perfect, nothing to over powering and yet added just perfect amount of sweetness.

 Chocolate Chip Cupcakes with Whipped Pistachio Pudding Frosting
 Makes Approx 12

Cupcakes:
1 Cup Flour
1/2 Cup Sugar
3/4 Cup Milk
2 tsp Vanilla Extract
1 tsp Baking Powder
3 Tbsp Butter
1/2 Cup Milk Chocolate chips
Dash of Salt
                                                                          
Frosting:
1 Package of Pistachio Instant Pudding mix
1/2 Cup Milk
1/2 Cup Heavy Cream
1/4 Cup Powdered Sugar

Preheat Oven to 350F/170C
Cream butter and Sugar together until fully mixed. Add Flour, salt, baking powder and milk, in equal amounts till fully blended, Mix in vanilla and blend on high for about 3-5 minutes. Fold in chocolate chips Fill cupcake pan and bake for 15- 20 mins or until a knife comes out clean.

Frosting:
Mix the Milk and pudding mix and set off to the side,
In another bowl mix your heavy cream and powdered sugar on high for about 10-15 mins or until you have a nice whipped cream, Blend in your milk/pudding mix on high for 5 mins and chill in the fridge for about 30 mins.
Frost your cupcakes once the frosting is chilled and cupcakes are cooled. I used a piping bag for this, but you do it how ever you want.
