Having just moved to Australia in November of 2011, I'm still getting used to new foods that I may have not seen before. This last shopping trip resulted in finding wattleseed. This spice wasn't in the spice isle but tucked away in a small corner next to organic foods. I decided I must know what this was and how it could be used, Unfortunatly the wikipedia article was short, Paragraph or so. Further Google search led me to a recipe for cupcakes. So it was decided I had to try my hand at it.
Wattleseed and Vanilla Cupcakes
Makes Approx 18
Cupcakes
113g/ 1/2 Cup Butter
2/3 Cup Sugar
3 Eggs
1 tsp Vanilla Extract
1 1/2 Cups Flour
1 1/2 tsp Baking Powder
Pinch of Salt
1 tsp Ground Wattleseed
1/2 Cup Milk
Frosting
2 Cups Powdered Sugar
113g/ 1/2 Cup Butter (softened)
1/2 tsp Vanilla Extract
1/2 tsp of Ground Wattleseed
1/8 Cup Milk
Preheat Oven to 350F/170C
Cream butter and sugar together until light and fluffy, add eggs one at a time till full blended. Add Vanilla and milk and mix, and slowly add dry ingredients( flour, wattleseed, baking powder and salt) until fully mixed. I found my batter was overly thick, so I added more milk, feel free if you want to add more at a few splashes at a time. Bake for 18-20 minutes or until a knife comes out clean.
For the frosting,
Cream Butter in a bowl until smooth. Add in sugar and Milk and blend, Once it is smooth add your Vanilla extract and ground wattleseed.
Decorate and Enjoy <3
